Ingredients Needed
All you need to make this recipe are 5 simple ingredients:
- bread
- ricotta cheese
- fresh blueberries
- lemon zest
- honey

What Type Of Bread To Use
You can use any type of bread you like for this ricotta toast. Some of my favourites include:
- sourdough or another crusty bread
- if you want to up the nutrition even more, use a high-fiber whole grain bread. I love brands like Silver Hills or Food For Life!
- if you’re gluten-free, please use a certified gluten-free bread
Ways To Serve Blueberry Ricotta Toast
This blueberry ricotta toast can be enjoyed as a meal or snack. Feel free to increase or reduce the number of slices served, as desired.
Another way to serve it would be as an appetizer – you can slice small pieces of baguette, toast those, and add the toppings (similar to crostini). It’s sure to be a hit at any party!
Blueberry Nutrition Benefits
Blueberries are an excellent source ofdietary fibre, with one cup providing 3.6 grams (14% of your daily needs).
They’re also a great source of micronutrients, like:
- vitamin C
- vitamin K
- vitamin B6
- manganese
Blueberries are also rich inantioxidants called anthocyanins, which provide many protective health benefits.
Ricotta Nutrition Benefits
Ricotta cheese is a great source of complete protein – a 1/2-cup serving provides about 12 grams.
That same 1/2-cup serving also provides about 20% of your daily calcium intake.
Ricotta also contains smaller amounts of other micronutrients, like:
- vitamin B12
- vitamin B6
- magnesium
- iron
- potassium

Ingredients
- 2 large slices bread of choice (see notes)
- Approx. 1/2 cup ricotta cheese
- Approx. 1 cup blueberries, fresh
- 1 lemon, zest only
- 1/2 tsp honey
Instructions
Toast bread in toaster or oven.
Spread ricotta cheese evenly over each slice of bread.
Spread blueberries evenly over ricotta cheese.
Drizzle toasts with honey and sprinkle lemon zest over top. Enjoy immediately!

*NOTE: the amount of ingredients listed here are approximate and will depend on what type and size of bread you are using. I measured the amounts on 2 standard slices of sourdough bread. Simply adjust accordingly and to desired hunger levels!
